The Short Answer

Country Tavern on FM 2767 is the best barbecue in Kilgore, a roadhouse open since 1939 whose pork ribs are the dish East Texas drives in for. Rolling Smokes BBQ on Utzman Street is the pick for brisket, and Kilgore Smokehouse on Industrial Boulevard is the weekday lunch answer when the others are closed.

Country Tavern

FM 2767, in the country west of town · $$

Known for Pork ribs that built the reputation of barbecue in this part of East Texas

Country Tavern opened in 1939 during the Great East Texas oil boom and has been trading on the same dish ever since. KLTV's profile of the place reported that Toby Pilgrim's grandmother, Lois Mason, bought the tavern in 1972, that his mother waited tables and his father cooked, and that Larry Hagman, Robert Duvall, Sandy Duncan and George Bush have all eaten there. Visit Kilgore, the city's own tourism office, calls its ribs the prettiest in the region and describes a dark red sauce that gives the hickory-smoked meat a sweet East Texas edge.

Come for the ribs. The brisket is good and the smoked turkey gets steady praise, but the meaty pork ribs are what made this a destination for people who are not from Kilgore. The two real complaints in recent reviews are the wait, which can run long on a Friday or Saturday night, and the prices, which are the highest of any pit on this list. Both are survivable. Arriving before six is the fix for the first one.

Go-to order or tip: Go on a weekday, and go early. This is a nine o'clock-closing roadhouse that fills up at seven, and the only pit in town open past eight.

Hours
Monday to Thursday 11 a.m. to 9 p.m., Friday and Saturday 11 a.m. to 10 p.m., closed Sunday

Rolling Smokes BBQ

Utzman Street at Highway 42 North · $

Known for Sliced brisket with a visible smoke ring, plus burnt ends and barbecue stuffed potatoes

This is the best brisket in Kilgore and the highest rated pit in town, sitting near 4.9 across several review platforms, though on review counts in the dozens rather than the hundreds, so read the score as a strong signal rather than a settled verdict. Reviewers describe the sliced brisket as very moist with a pronounced smoke ring, and the burnt ends, pulled pork, boudin and barbecue stuffed potatoes all come up repeatedly. The kitchen sides people name are the mac and cheese, the tater tot casserole and the baked beans, with blackberry cobbler to finish.

It started as a mobile unit working fairs and festivals and still caters, which is why the operating week is short. Four days, Wednesday through Saturday, closing at seven or whenever the brisket runs out. Visit Kilgore lists the address as 2130 Utzman Street while a few directories carry 2130 North Henderson Boulevard for the same place, so use the Utzman address the city publishes and call if you cannot find it.

Go-to order or tip: Ask for the brisket sliced, and get it on top of the mac and cheese. Regulars order it that way and they are right.

Hours
Wednesday to Saturday, roughly 11 a.m. to 7 p.m., and it sells out some days

Kilgore Smokehouse

Industrial Boulevard · $

Known for Chopped beef sandwiches and Pittsburg hot links

Kilgore Smokehouse is the weekday lunch pit, and it is the only one on this list that publishes its hours on its own website and keeps a normal Monday to Friday week. Ten in the morning to six in the evening, closed both weekend days, which is the exact inverse of how most of this town's barbecue works. If you are in Kilgore for work rather than for a weekend, this is your default.

The menu is built around chopped beef sandwiches, meat plates with classic sides, and Pittsburg hot links, the East Texas sausage from the town of Pittsburg about seventy miles north that most pits outside this region do not carry. Customers also single out the sliced beef, the boudin, and the potato salad and baked beans. Order online for pickup through the site if you are on a lunch break.

Go-to order or tip: Get the Pittsburg hot links. They are a regional item you cannot order in most of Texas, and this is the easiest place in Kilgore to try them.

Hours
Monday to Friday, 10 a.m. to 6 p.m., closed Saturday and Sunday

Raisin' Smoke BBQ & Catering

Highway 31 East · $

Known for Smoked brisket, chicken, ribs and hot links from a small owner-run pit

Raisin' Smoke is the newest of the five and the smallest. It runs out of a Highway 31 East location on a Wednesday to Saturday week, smoking brisket, chicken, ribs and hot links, with Southern sides including potato salad and baked beans and Kool-Aid pickles on the counter. Listings name Stephen and Lacreshia Walker as the owners. The catering half of the business is as much of the operation as the walk-up half.

Two cautions. Review counts here are genuinely small, single digits on some platforms and under a hundred across all of them, so there is less evidence behind this pick than behind the four above it. And a handful of older directories still list the business at 2701 South Henderson Boulevard. The Highway 31 address is the one its own Facebook page, Waze and the restaurant directories all carry with the current phone number, so that is the one we use.

Go-to order or tip: Call before driving out. It is a four-day week at a small pit, and the phone is faster than any listing.

Hours
Wednesday to Saturday, roughly 11 a.m. to 7 p.m., closed Sunday to Tuesday

Bodacious Bar-B-Q

Highway 42, north side · $

Known for Wood-pit smoked meats from the East Texas chain that started in Longview in 1968

Bodacious is an East Texas institution, started by Roland Lindsey on Mobberly Avenue in Longview in 1968 and grown to more than a dozen stores, and the Kilgore location is listed on Visit Kilgore's own barbecue page. The company line is that the barbecue is prepared fresh daily with its own spice blend and smoked over wood-burning pits, and that is a fair description of what you get.

We have it fifth for a straightforward reason. The individual stores are run with a lot of independence and they are not equal, and this one carries the weakest review scores of any pit on this list, around 3.2. Other Bodacious stores, the Longview original and the Marshall store that Texas Monthly singled out for its spare ribs, are stronger. Here, it is a reliable fallback rather than a destination.

Go-to order or tip: If you are already driving toward Longview, the Mobberly Avenue original is twenty minutes away and a clear step up.

How did we pick these?

Kilgore is a town of about thirteen thousand people, so the honest size of this list was never going to be ten. We built the candidate set from the city's own Visit Kilgore barbecue directory, then widened it with Yelp, Tripadvisor, Restaurantji and local television coverage, and then cut everything we could not confirm was open and smoking meat right now.

Three names came out. Boomtown BBQ on North Highway 259 is flagged permanently closed, and the listings that still carry it disagree on whether its address is even in Kilgore or in Overton. The Back Porch on Broadway Boulevard is a genuinely popular place with live music three nights a week, but every menu we could find is burgers and sandwiches, and no source confirms it smokes its own meat, so it does not belong on a barbecue list. We also checked a handful of directory listings that turned out to be the same two restaurants duplicated under old addresses.

No business here has any relationship with us, and nothing on this page is sponsored or paid. Addresses and phone numbers come from the businesses' own sites where they have one, and from Visit Kilgore where they do not. Where listings disagreed on hours, which they did for three of the five, we describe the pattern and tell you to call rather than printing a time we cannot stand behind.

Which Kilgore barbecue is open when you need it?

The operating week matters more here than anywhere else we have ranked. Two of these five pits are closed Sunday through Tuesday and one is closed both weekend days, which means the right answer depends entirely on what day you are reading this.

Pit Open Order this Price
Country Tavern Monday to Saturday, until 9 or 10 p.m. Pork ribs $$
Rolling Smokes BBQ Wednesday to Saturday, 11 to 7 Sliced brisket $
Kilgore Smokehouse Monday to Friday, 10 to 6 Pittsburg hot links $
Raisin' Smoke BBQ Wednesday to Saturday, 11 to 7 Brisket and hot links $
Bodacious Bar-B-Q Most days, roughly 10.30 to 7.30 Chopped beef $

Monday or Tuesday, you have Country Tavern, Kilgore Smokehouse and Bodacious. Wednesday through Friday, you have all five. Saturday, you lose Kilgore Smokehouse. Sunday, you have Bodacious and a phone call.

What should you know before you go?

Selling out is normal, not a scandal. Rolling Smokes and Raisin' Smoke both cook in limited batches and both close early on the days the brisket goes. Lunch beats dinner at either one, and noon beats one.

Country Tavern is the one where timing changes the experience most. It is the only pit in Kilgore open past eight, which means it absorbs the entire evening barbecue demand of the area on a Friday and Saturday, and reviewers describe waits that run well over an hour on those nights. Go Tuesday at six and it is a different restaurant.

Two of the five are not on a street you would stumble onto. Country Tavern is west of town on FM 2767 and Bodacious is north on Highway 42. Both need a car and a map. Rolling Smokes, Raisin' Smoke and Kilgore Smokehouse are all inside town, within a few minutes of the World's Richest Acre downtown.

How does Kilgore compare with Longview and Marshall?

Twenty minutes northeast, Longview has both the original Bodacious on Mobberly Avenue and a genuinely deeper bench, and that is covered in our Longview barbecue ranking. Marshall, half an hour east on I-20, has an 83-year-old family smokehouse and a Texas Monthly-reviewed rib counter, which we go through in the Marshall barbecue list.

What Kilgore has that neither of them does is Country Tavern, which is older than almost any pit in East Texas and still sells out its ribs on a Saturday night. That is the trip. The rest of this list is what you eat on the other six days.

What should you do next?

If it is a weekday evening, go to Country Tavern and order the pork ribs. If it is lunchtime Wednesday through Saturday, go to Rolling Smokes on Utzman Street and get the sliced brisket. If it is a Monday or Tuesday lunch and you want to be out in half an hour, Kilgore Smokehouse on Industrial Boulevard, hot links.

More of the town is in the Kilgore city guide, and every ranking we have published is collected at the barbecue hub.

Frequently Asked Questions

It is at 1526 FM 2767 with a Kilgore 75662 address, but it sits out in the country west of town rather than on a Kilgore street. Plan on driving, and plan on it taking ten to fifteen minutes from the World's Richest Acre downtown. The phone is (903) 984-9954.

Nowhere on this list, reliably. Country Tavern is closed Sunday, Kilgore Smokehouse is closed both weekend days, and Rolling Smokes and Raisin' Smoke both run Wednesday to Saturday. Bodacious on Highway 42 is the only one with any chance, and its weekend hours vary, so call first.

A spicy link sausage associated with Pittsburg, Texas, about seventy miles north of Kilgore. The Texas Legislature's 2019 resolution naming Pittsburg the Hot Link Capital of Texas traces them to Charlie Hasselback, who brought his recipe to Camp County in 1897 and sold the links cooked from 1918. They are an East Texas regional item, and Kilgore Smokehouse on Industrial Boulevard carries them.

No. No Kilgore pit is on the current Texas Monthly Top 50 list. Country Tavern has drawn magazine and television coverage over the years for its ribs, but it has not been a Top 50 entry. The nearest Top 50 pit is in Longview, about twenty minutes northeast.

Rolling Smokes BBQ on Utzman Street. Reviewers consistently describe its sliced brisket as moist with a strong smoke ring, and it is the dish the pit is known for. Country Tavern's brisket is good but its reputation rests on pork ribs, so order accordingly.
