The Short Answer

Opal's Table on West Wall Street is the best restaurant in Midland, a downtown dining room from Chef Chip Hight with a cocktail bar in the basement. Cowboy Prime is the steakhouse to book, with Michelin-starred chef Graham Elliot as culinary director, and Saint Blaise in Frost Tower is the all-day room downtown.

Opal's Table

Downtown, West Wall Street · $$$

Known for The downtown dining room Midland books for an anniversary, with a separate cocktail bar one floor down

Chef Chip Hight named Opal's Table after his grandmother and built it into the restaurant the rest of downtown Midland now orbits. The kitchen runs prime steaks and seafood against a seasonal menu rather than a fixed one, and the wine list is the deepest in the city. It is a Midland Chamber of Commerce member under fine dining, which is a duller signal than a review but a checkable one.

Underneath it is The Basement, a separate bar with its own small plates menu and spirits list. The two work as one visit if you arrive early, and The Basement is the better answer when you want the kitchen without the dining room.

Go-to order or tip: Lunch runs a tight two-hour window on weekdays and the dining room goes dark between services. For a Saturday you get dinner only, so call.

Hours
Lunch and dinner Monday through Friday, dinner only Saturday, closed Sunday

Cowboy Prime

Ally Village, north Midland · $$$

Known for A West Texas steakhouse with a Michelin-starred chef as culinary director

Felipe Armenta, the restaurateur behind Cork and Pig Tavern and Red Oak Kitchen, opened Cowboy Prime in the old Butter space in December 2022 and brought in Graham Elliot, a two-time Michelin star winner, as partner and culinary director. CBS7 and the Houston Chronicle both covered the opening, which is more independent press than any other steakhouse in the Permian Basin has drawn.

The result is a steakhouse that takes plating and sourcing seriously without pretending it is in Chicago. Almost the whole staff was hired out of West Texas, which is the detail the local coverage kept returning to.

Go-to order or tip: It takes reservations through Tock, which is the reliable route on a Friday or Saturday. Ally Village parking is easy, which is not true of the downtown picks.

Hours
Open daily, late morning through the evening, with a later close Friday and Saturday

Saint Blaise

Frost Tower, downtown · $$$

Known for The only downtown room serving breakfast, lunch and dinner in one continuous day

Saint Blaise is a modern American brasserie on the ground floor of Frost Tower, and its useful trick is the clock. Most of Midland's good restaurants open for a lunch window, shut, and reopen for dinner. This one runs breakfast, lunch and dinner in sequence, which makes it the default when you land at an odd hour.

The menu is comfort cooking with an oyster program attached, oysters sourced from the East Coast, plus a cocktail and martini list that gets as much attention as the food. It carries its own entry in the Texas Monthly restaurant directory.

Go-to order or tip: The happy hour is the locals' version of this restaurant. Go for oysters and a martini at the bar rather than a full dinner in the dining room.

Hours
Breakfast through dinner most days, check the site before a weekend visit

Georgie's Place

Downtown, North Marienfeld Street · $$$

Known for European-influenced cooking from the Opal's Table kitchen, in a newer downtown room with a patio

Georgie's opened on January 26, 2026, the second Midland restaurant from Chip Hight, and it is named for his niece Georgia. Where Opal's Table is the occasion restaurant, Georgie's is the one you can get into on a Tuesday, with a menu that leans European without turning into a tasting menu.

It has indoor and patio seating, a full cocktail bar and an international wine list. Being the newest good room downtown, it is also the easiest reservation of the three on Wall and Marienfeld.

Go-to order or tip: Book through Resy. The patio is the reason to come between October and April, and it is the first thing to fill on a mild evening.

Hours
Lunch, happy hour and dinner on weekdays, closed Sunday

Santomar Contemporary Cuisine

West Wadley Avenue · $$$

Known for Ceviche and sushi alongside picanha and short rib, in the old Cattle Baron building

Santomar took the space the Cattle Baron used to occupy and did something Midland had no version of, a surf and turf menu that runs Peruvian ceviche and rolled sushi on the same page as picanha and braised short rib. Texas Monthly reviewed it on March 31, 2026 and put it in the celebratory night out category, which is the right bracket.

It is newer than the downtown restaurants above it on this list and the service reports are still uneven, so we have ranked it on the cooking rather than on the whole evening. Go for the ceviche.

Go-to order or tip: One aggregator lists a Houston zip code for this address, which is wrong. It is 79705, on Wadley between Midland Drive and Midkiff.

Hours
Lunch through dinner most days, with a later close on Friday

Luigi's Italian Restaurant

Downtown, North Big Spring Street · $$

Known for The oldest restaurant on this list, open under the same name since 1958

Louis and Zelda Hochman opened Luigi's on September 2, 1958, which makes it older than most of the buildings around it, and it moved across the parking lot to its current spot in 1972. The Better Business Bureau file, opened in 1969, backs the founding date, which is rarer than it sounds for a claim like this.

The cooking is red-sauce Italian and pizza, not a modern trattoria, and that is the point. It is the one restaurant in Midland where three generations of the same family have all eaten the same dish.

Go-to order or tip: Go at lunch. The dining room is small, the downtown lunch rush is real, and the pizza comes out faster than the pasta.

Hours
Lunch and dinner on weekdays, closed Sunday

Wall St. Cocina

Original Town, downtown · $$

Known for Weekday Mexican cooking downtown, built around tortas, birria and street tacos

Wall St. Cocina is a downtown lunch counter in the honest sense, open weekdays and shut both weekend days, which tells you exactly who it is for. The tortas are the reason to go, with the estofado the one most often singled out, and the birria and quesadillas hold up alongside.

It is three blocks west of Opal's Table on the same street, so it slots neatly into a downtown day that does not involve a tablecloth.

Go-to order or tip: Closed both weekend days. If you are in Midland Saturday and want this kind of food, go to Providencia instead.

Hours
Monday through Friday only, closed Saturday and Sunday

Providencia

Mockingbird Lane, north Midland · $$

Known for Contemporary Mexican cooking on the north side, open Tuesday through Sunday

Providencia is the weekend answer to Wall St. Cocina, a contemporary Mexican kitchen on Mockingbird Lane that runs six days and stays open Sunday, which almost nothing else on this list does. The room is more restaurant than taqueria and the menu is built accordingly.

It does not take reservations, so the trade is that you can always try and you might wait. On a Friday evening, expect to.

Go-to order or tip: A Providencia in Brownwood shows as closed in listings. That is a different location and does not affect the Midland restaurant.

Hours
Tuesday through Sunday, closed Monday, with later closes Friday and Saturday

KD's Bar-B-Q

Garden City Highway · $

Known for Mesquite-smoked brisket from a counter that has run since 1997

KD's has smoked over mesquite on Garden City Highway since 1997 and is the barbecue Midland actually eats, as opposed to the barbecue Midland drives to Lockhart for. Brisket is the order. It is a counter, not a destination smokehouse, and it does not pretend otherwise.

Note that the awards KD's advertises are readers' choice polls run by the local paper, which we cannot independently verify year by year, so treat them as a local reputation signal rather than a ranking.

Go-to order or tip: Closed Sunday and Monday and it sells out of brisket some afternoons. Midday Tuesday through Friday is the safe window.

Hours
Tuesday through Saturday, daytime into early evening, closed Sunday and Monday

Murray's Restaurant and Deli

West Wadley Avenue · $$

Known for A Midland lunch institution since 1984, known for gumbo and the green chile burger

Murray's has been feeding Midland lunch since 1984 and has the menu to prove it, deli sandwiches, burgers, seafood gumbo and now pizza, all on one page. The seafood gumbo and the green chile burger are the two dishes regulars order without reading.

It is not trying to be any of the restaurants above it. It is the place you go when you have 45 minutes and want something better than a chain.

Go-to order or tip: Saturday service ends mid-afternoon and Sunday is dark. Weekday lunch is genuinely busy between noon and one.

Hours
Monday through Saturday, closed Sunday, with a short Saturday

How did we pick these?

We started from the names Midland's own institutions carry: the Visit Midland listings, the Midland Chamber of Commerce member roll, and the Midland restaurants that hold their own entries in the Texas Monthly restaurant directory. Then every candidate got checked for the two things that ruin a list like this, whether it is still open and whether the address and phone survive a cross-check against the restaurant's own site.

Three cuts are worth naming. Basin Burger House on North Colorado still shows up in almost every "best of Midland" roundup online and has been closed since 2020. The Garlic Press on West Wadley is likewise marked closed. The Hemingway on Wadley gets recommended as a restaurant constantly and is a cigar lounge, so it does not belong on a restaurants list no matter how good the room is. We also left off Mulberry Cafe, which is a genuinely good breakfast and lunch spot on Wadley, because its downtown Wall Street branch is closed and the remaining location closes at 3 p.m., which makes it a different kind of recommendation.

There are no partners, clients or sponsored entries on this list. The scaffolding script matched nothing in Midland, so every pick here is an ordinary editorial call with no relationship behind it.

Where sources disagreed we describe the pattern instead of asserting a number. Several of these restaurants publish one set of hours on their own site and another on the aggregators, so the hours below are written as patterns. We have not published a single price, review count or award year that we could not trace to a source we actually read.

What should you know before you go?

The constraint in Midland is the calendar, not the price. Six of these ten are closed on Sunday, and the two downtown lunch rooms shut between services. Plan the day around which doors are open.

Restaurant Closed Best for Price
Opal's Table Sunday An occasion dinner $$$
Cowboy Prime Open daily Steak, and a booked weekend $$$
Saint Blaise Check the site Breakfast, or oysters at the bar $$$
Georgie's Place Sunday A weekday dinner you can get into $$$
Santomar Check the site Ceviche and a celebration $$$
Luigi's Sunday A downtown lunch with history $$
Wall St. Cocina Saturday, Sunday A weekday torta $$
Providencia Monday Sunday, when the rest is shut $$
KD's Bar-B-Q Sunday, Monday Brisket at midday $
Murray's Sunday A 45 minute weekday lunch $$

Two practical notes. Downtown parking around Wall and Marienfeld is street parking and it tightens during the weekday lunch hour, while the north side rooms on Spring Park and Mockingbird sit in shopping centers with lots. And Midland's good restaurants take reservations through three different platforms, Tock for Cowboy Prime, Resy for Georgie's Place, OpenTable for Opal's Table and Santomar, so there is no single app that covers the city.

Is Midland actually a restaurant town now?

More than it was. Four upscale dining rooms opened or changed hands downtown in the space of a few years, and two of them, Saint Blaise and Santomar, have carried Texas Monthly attention. Oil money pays for that, which also means the scene moves fast in both directions. Two of the restaurants this list cut were on every recommendation page we found and have been shut for years.

The honest summary: Midland has four or five restaurants that would be good anywhere, a solid second tier, and a lot of stale internet advice pointing at closed doors.

What else is nearby?

Odessa is 20 miles west on I-20 and most Permian Basin residents treat the two cities as one dining market, so do not rule out crossing the county line for dinner. Further out, the best restaurants in Abilene covers the next real hub east on I-20, and the best steakhouses in Amarillo is the equivalent guide for the top of the Panhandle if you are working north.

What should you do next?

Book Cowboy Prime for a Friday or Saturday through Tock and build the evening around it. It is the one meal in Midland worth planning a night for, and it is the one that fills.

For a single unplanned night downtown, walk into Saint Blaise, sit at the bar and order oysters. On a Sunday, when six of these ten are dark, drive north to Providencia.

More lists for the city are collected on the Midland guide, and every city we have ranked for food sits under the best restaurants in Texas.

Frequently Asked Questions

Opal's Table on West Wall Street, from Chef Chip Hight, is the city's fine dining anchor and the room Midland books for an occasion. Cowboy Prime is the better choice if you specifically want a steakhouse, and Santomar is the newest of the upscale rooms.

Providencia is the most reliable Sunday option on this list, and Cowboy Prime also serves Sunday. Opal's Table, Georgie's Place, Luigi's, Wall St. Cocina, KD's Bar-B-Q and Murray's are all closed Sunday, which catches out visitors more than anything else in Midland.

Four of the ten are within a few blocks of each other downtown. Opal's Table at 223 W Wall St, Saint Blaise in Frost Tower at 508 W Wall St, Georgie's Place on North Marienfeld, and Luigi's on North Big Spring. Wall St. Cocina adds a weekday lunch option three blocks west.

For Cowboy Prime on a weekend, yes, and it books through Tock. Georgie's Place takes reservations through Resy. Opal's Table is worth a call for a Saturday. Providencia does not take reservations at all, and the rest of the list is walk-in.

Midland has the deeper upscale scene, with four dining rooms downtown that would hold their own in a bigger city. Odessa is stronger on long-running family restaurants and Mexican food. The two cities are 20 miles apart, so most Permian Basin residents treat them as one dining market.
