The Best Breakfast in Paris, Texas

This is the one thing in Paris you cannot get anywhere else in Northeast Texas. The shop builds its bagels on a homegrown whole wheat wild yeast starter, hand-rolls each one, and ferments the dough at least eighteen hours before boiling and baking it. That is a real bagel process, not a bread roll with a hole in it.

The business grew the slow way, from a farmers market booth in 2021 to a food truck in 2022 to a permanent room at Downtown 127 in 2023. The Texas travel series The Daytripper filmed a bagel-making segment for its Paris episode, and MyParisTexas reported the shop's feature on the show.

If you want breakfast on a Tuesday, this is the wrong entry and everything above it is a better answer. If it is Saturday and you want a sit-down brunch on the historic plaza rather than a diner plate, it is the only version of that in town.
