How did we pick these?
We started from the full set of places in Paris that actually serve food before noon, then cut hard. The first cut was geography. Search for breakfast near Paris, Texas and the results quietly pull in Bonham, Savoy, and Mount Pleasant, which are thirty to sixty miles away. Belle Rae's Cafe is in Bonham. Big E's Cafe is in Savoy. Country Cafe Diner is in Mount Pleasant. None of them belong in an article about Paris, and all three show up in the aggregator lists.
The second cut was anything we could not confirm is currently trading. Just Love Coffee Cafe opened on NE Loop 286 and got two write-ups in the local press, but its listings now carry a closed marker and we could not resolve it either way, so it is out. McKee's on North Collegiate is out for a different reason: the sign says twenty-four hours and the current listings say roughly 6 a.m. to 9 p.m., and we are not going to publish an opening time we cannot stand behind. Southern Maid is a Garland-based franchise and its Paris address is reported two different ways, so it is out too.
What survived is eight businesses we could tie to an official site, the Lamar County chamber directory, the city tourism board, or local reporting from MyParisTexas. Ranking is on the merits of the breakfast, not on how big the room is.
One entry, Corner Cafe, is a web design client of our publisher, and it is labeled as a partner in the list. It sits at the bottom on purpose, because it is a lunch restaurant that happens to serve a Saturday brunch rather than a breakfast place. What should you know before you go?
The opening time matters more than the menu. Paris breakfast splits cleanly into two groups: the 6 a.m. crowd out on Main Street, and the 7 a.m. downtown crowd that closes by early afternoon. If you are eating before work, downtown is not your answer.
Weekends invert everything. Roadhouse closes both weekend days. Cozy Cappuccino closes both weekend days. Love & Bagels and Paris Bakery close Sunday and Monday. On a Sunday morning, That Place Downtown is very close to the only door open.

Downtown is a five-minute walk end to end. Five of these eight are within a couple of minutes of the plaza. Park once, look in the bakery window, then decide.
What if you only have one morning?
Do it downtown on a Saturday. Start at Love & Bagels when it opens, walk two blocks to Paris Bakery and buy something for later, then loop the plaza past the Culbertson Fountain. If you want a plate and a chair instead of a bag, That Place Downtown is a block away and opens at seven on a Saturday.
If it is a weekday and you are up early, the day starts on Main Street instead: Roadhouse at 6, or South Main Cafe at 6.30.
What should you do next?
Pick by the clock, not by the review count. Before 7 a.m. means South Main Cafe or Roadhouse. After 7 and downtown means Love & Bagels or Paris Bakery. Sunday means That Place Downtown.
