The Short Answer

Chuck's Country Smoke House on FM 1970 is the best restaurant in Carthage, a Texas Monthly reviewed barbecue joint built in a rebuilt shed near Lake Murvaul. Twisted Hickory on West Sabine is the best barbecue inside town, and Sunflower Mercantile serves lunch from a restored pharmacy soda fountain on the square.

Chuck's Country Smoke House

FM 1970 southwest of Carthage, between Clayton and Gary near Lake Murvaul · $$

Known for The Susie Q, chopped boudin with brisket and sausage on a jalapeno sourdough bun

Chuck Terrell left a sales career, moved onto his family's homestead southwest of town and rebuilt a run down shed into a barbecue joint, teaching himself to smoke from videos on a pit that was already on the property. Texas Monthly reviewed it in January 2015, when it had been open roughly six months, and The Texas Bucket List filmed there in 2019. Both single out the same two things.

The Susie Q is chopped boudin, brisket and sausage on a jalapeno sourdough bun, named for the first customer who ordered it that way. The Frito Bomb is brisket and sausage over corn chips with beans, melted cheese and sauce. The smoked boudin is the tell that Carthage sits close to the Louisiana line. Nothing else in Panola County has this much outside coverage, and it earns first place on that plus the cooking.

Go-to order or tip: It is a genuine drive, several miles southwest of town toward Lake Murvaul, on a short week. Phone (903) 690-0105 the morning you go rather than trusting a listing.

Hours
A short Thursday to Saturday week. Listings agree on Thursday lunch and Saturday evening and disagree on Friday, so call first

Twisted Hickory BBQ

West Sabine Street, a few blocks off the courthouse square · $

Known for Chopped brisket sandwiches and a smoked mac and cheese that reviewers order on purpose

The best barbecue you can reach without leaving town, and the cheapest serious plate in Carthage. The orders people come back for are the chopped brisket, chopped pork, the pork belly and a smoked mac and cheese, plus a jalapeno pineapple sausage that turns up as a special. It runs in a food truck style format rather than a dining room.

It carries the deepest public review record of any independent kitchen in Carthage, around 200 ratings across platforms sitting near four stars, and it appears on the City of Carthage dining directory. We rank it second rather than first only because Chuck's has outside editorial coverage and this does not.

Go-to order or tip: Go at lunch and go early. Every listing shows it closing in the afternoon, and none of them agrees on when.

Hours
Daytime only, closing in the afternoon. Listings conflict on the exact window, so treat it as a lunch stop

Sunflower Mercantile and Soda Shop

East Panola Street on the historic courthouse square · $

Known for Grilled cheese and old fashioned soda fountain sundaes in a restored pharmacy

Scott Reeves renovated a former pharmacy on the square and kept the soda fountain, which is why Texas Highways points visitors here to start an afternoon downtown. The food is deliberately simple, grilled cheese and the like, and the sundaes come off the original fountain rather than a freezer case.

It is on this list because of where it is and what it is, not because it is ambitious. If you are in Carthage for the Texas Country Music Hall of Fame at 310 West Panola, this is a three minute walk and the only place in town where lunch is also a look at the building.

Go-to order or tip: Combine it with the square. The courthouse, the Hall of Fame and the Sammy Brown Library are all within a few blocks, and this is the only kitchen among them.

Hours
Daytime, built around the square's shopping hours. Call before a late afternoon visit

Texas Tea Room

East Sabine Street, at the Panola County Heritage Museum · $$

Known for A sit down lunch of sandwiches on house baked bread, inside a museum building

The tea room operates in the Panola County Heritage Museum building on East Sabine, which is how it appears in the Texas Historical Commission's museum records as well as the city's dining directory. The kitchen is lunch focused, with sandwiches on bread baked in house, pasta and plated entrees, and it is the nearest thing Carthage has to an occasion lunch.

It is fourth because the hours are the least predictable on this list. Different records show different closing times for the same days of the week, and nothing we found settles it. The address, the phone and the format are consistent everywhere.

Go-to order or tip: Book or at least call for a group. It is a small room in a museum, not a restaurant with turnover, and the schedule varies.

Hours
Built around lunch. Listings show an 11am open and disagree on whether evenings and Saturdays run late, so confirm by phone

Circle M Cafe

West Panola Street, across from Panola College · $

Known for The Hoss Burger, and country plate lunches near the college

Down home country cooking opposite Panola College, which means it functions as the campus lunch room as much as a cafe. The orders that come up repeatedly in public reviews are the Hoss Burger and fries and the plate lunch side of the menu, and reviewers describe it as home style rather than inventive.

Two cautions. One directory lists it at 644 West Panola, which is Gail's Place, so use 1122 West Panola and the (903) 631-2121 number from the city directory. And the hours shown on aggregators are snapshots rather than a schedule, so phone ahead.

Go-to order or tip: It sits across from the college, so it empties and fills on the class timetable. Just after noon is the worst time to walk in.

Hours
Opens late morning for lunch. Call for breakfast and closing times

Main Street Cafe

West Panola Street, near the square · $

Known for Breakfast, biscuits and gravy, and a hamburger steak plate at lunch

The breakfast kitchen on this list. Biscuits and gravy, omelets, pancakes and a hamburger steak plate are the items that come up most in public reviews, and it carries a healthy review count for a town of 6,000 or so. If you are driving US 59 and need breakfast before the day starts, this is the stop.

It is a straightforward small town cafe and we are not going to pretend otherwise. It earns a place because Carthage has exactly one morning option worth naming and this is it.

Go-to order or tip: Come for breakfast rather than lunch. Nothing published suggests dinner service, so do not plan an evening around it.

Hours
Breakfast and lunch. No evening service is published

Jucy's Hamburgers

West Panola Street, the commercial strip · $

Known for A hand formed East Texas burger from a small regional chain, not a national one

An East Texas burger chain run by the Maxey family out of Longview, not a national brand, and Texas Highways has profiled it on the strength of the burger. It grew slowly and deliberately, and KLTV reported a fourth Tyler store opening in June 2025, so it is expanding inside its own region rather than franchising out of it.

We are labelling it plainly. It is a chain, it is on the commercial strip rather than the square, and it is here because a Carthage burger list without it would be dishonest. If you want the best thing a chain does in this town, it is this.

Go-to order or tip: It is on the strip with the national fast food, so if you want a burger and the independents are closed, this is the one to pick out of that row.

Hours
Daily fast service hours. Confirm Sunday by phone

Jalapeno Tree

West Panola Street, close to downtown · $$

Known for Full service Tex-Mex with the most predictable hours in town

A family owned East Texas Mexican chain with 15 restaurants, which opened its Carthage store on August 1, 1997 according to its own locations page. Its oldest location, in Henderson, dates to June 1994, so this is a regional operator that grew across a handful of counties rather than a national rollout.

It ranks last on merit and stays on the list on reliability. It is the only kitchen in Carthage that publishes its own address, phone and schedule on a site it controls, and the only full service dining room here that is dependably open at night. When everything else on this list has closed for the day, this is what is left.

Go-to order or tip: Use it as the fallback, not the plan. Chuck's, Twisted Hickory, the tea room and both cafes all shut earlier, and this is the one that will still seat you at 8pm.

Hours
Full service lunch and dinner, seven days. The chain publishes hours per location on its own site

How did we pick these?

We started with the City of Carthage's own Local Dining directory, which lists 39 places to eat, and worked down it. Stripping out the national chains, the convenience store counters and the travel centre franchises left roughly fifteen independent kitchens. Eight of those we could stand behind.

Two of the eight have real outside coverage, and they are the two at the top. Texas Monthly reviewed Chuck's Country Smoke House in January 2015 and The Texas Bucket List filmed there in 2019. Texas Highways sends visitors to Sunflower Mercantile and has separately profiled Jucy's. Everything else here rests on the city's directory for the address and phone plus current public reviews for what people actually order.

What we cut matters more than what we kept. Calabria Italian Restaurant and Tuscany's both had Panola Watchman coverage when they opened, and neither appears on the city's current dining directory, so we are not sending anyone to either. Grind and Grain Beverage Company on West Sabine is on the city list but we could find nothing outside directory stubs, so it is out until we can verify it is trading. Nene's, Rancho Grande and Stutes Cafe are all real addresses on the city list with too thin a record to rank honestly. Chick O' Fish, Pony Express, Master's Blend and Gail's Place are the same story.

No restaurant on this list is a client of ours or paid anything for its position. All eight are editorial picks, and the two chains are labelled as chains inside their own entries.

What should you know before you go?

Carthage food runs on daylight. Most of the independents here are breakfast and lunch operations that close in the afternoon, and the town's barbecue is on the shortest schedules of all. If you arrive at 7pm wanting the best thing in Panola County, you have missed it by five hours.

Restaurant Price Best for Reliability of published hours
Chuck's Country Smoke House $$ Barbecue worth the drive Low, a short three day week
Twisted Hickory BBQ $ Barbecue at lunch in town Low, listings conflict
Sunflower Mercantile $ Lunch and a soda fountain on the square Medium, daytime
Texas Tea Room $$ A sit down occasion lunch Low, call first
Circle M Cafe $ Burgers and plate lunches Medium
Main Street Cafe $ Breakfast Medium
Jucy's Hamburgers $ A burger any day High
Jalapeno Tree $$ Dinner after everything else shuts High

The geography is simple. West Panola Street is the commercial spine and carries Jalapeno Tree, Jucy's, Circle M and Main Street Cafe. The square and East Sabine hold Sunflower Mercantile, the Texas Tea Room and Twisted Hickory within a few blocks of the Panola County Courthouse. Chuck's is the outlier, several miles southwest on FM 1970 toward Lake Murvaul.

Almost nothing here has a website. That is the single most useful thing to know, because it means the hours you see on a maps app or a delivery platform were scraped once and may never have been right. We have given you the city directory's phone numbers for exactly that reason.

What else is worth the trip to Panola County?

Carthage is a country music town. The Texas Country Music Hall of Fame and the Tex Ritter Museum share a building at 310 West Panola Street, three blocks from Sunflower Mercantile, and Jim Reeves and Tex Ritter both came from here. If you are building a day around it, the Carthage city hub collects what we have published on the town.

For the same kind of list in the next towns over, see our guides to the best restaurants in Marshall 35 miles north and the best restaurants in Henderson 30 miles west, both of which have deeper benches than Carthage does.

What should you do next?

If you have one meal and a car, drive out to Chuck's on a Thursday or a Saturday and call first. If you have one meal and no appetite for a 20 minute drive, go to Twisted Hickory at lunch. If you are here for the square and the Hall of Fame, eat at Sunflower Mercantile and stay on foot.

Then phone ahead. Every recommendation on this page is only as good as the hours on the day you turn up, and in Carthage those are a phone call rather than a web page. More East Texas lists like this one live in our restaurants category and the best barbecue in Nacogdoches 60 miles south is the closest thing to a full barbecue ranking in this part of the state.

Frequently Asked Questions

Country music. The Texas Country Music Hall of Fame and the Tex Ritter Museum sit at 310 West Panola Street on the square, and both Jim Reeves and Tex Ritter came from Panola County. Carthage is also the county seat, and the Panola County Courthouse anchors the square the restaurants cluster around.

Chuck's Country Smoke House on FM 1970, if you are willing to drive southwest of town toward Lake Murvaul and go on one of its three open days. If you want barbecue inside Carthage on a weekday lunch, Twisted Hickory on West Sabine Street is the answer.

Plenty. The City of Carthage dining directory lists 39 places to eat and well over a third are national chains, mostly along West Panola Street and the Love's travel center on East Sabine. The two chains on this list, Jucy's and Jalapeno Tree, are East Texas regional operators rather than national brands, and both are labelled as such.

Only barely. Jalapeno Tree on West Panola Street is the most dependable evening dining room in town. Chuck's runs a Friday and Saturday evening service on a short week, and most of the independents on this list are breakfast and lunch operations that close in the afternoon.

Less reliable than the addresses. Most kitchens here have no website, so aggregator hours are snapshots that often conflict with each other for the same day. We have described the pattern rather than printing a specific time wherever sources disagreed. Phone numbers from the city directory are the thing to use.
