The Best Barbecue Towns in Texas

Nine Texas towns ranked for barbecue, from Lockhart with five joints and a legislative title to Lexington, where the best pits in the state fire once a week.

The Very Best of Texas Editors 3 min read How we rank →

The Short Answer

Lockhart is the best barbecue town in Texas and holds the legislative title to prove it, with five working joints inside one small town. Seguin has the single best plate in the state right now at Burnt Bean Co., Taylor has the 1949 institution in Louie Mueller, and Lexington has Snow's, open four hours a week.

Lockhart

Caldwell County, 30 miles south of Austin on US 183 · $$

Known for Five barbecue joints in a town of about 14,000, and the state title to go with them

No other town in Texas gives you this many serious options inside one grid of streets. The Texas House adopted House Resolution 1024 on May 26, 1999, naming Lockhart the Barbecue Capital of Texas, and the Senate followed in 2003. That is a real statute, not a slogan a tourism board invented.

Kreuz Market at 619 North Colorado has traded since 1900 and moved to its current building in 1999. Smitty's Market at 208 South Commerce occupies the room where the original Kreuz grocery stood and opened under its own name in September 1999, which is the famous family split in one sentence. Black's at 215 North Main has run since 1932 and is the oldest continuously operating restaurant in town. Chisholm Trail at 1323 South Colorado is the one locals use, cheaper and open from 7 a.m. And Barbs B Q at 102 East Market, opened in 2023 by Chuck Charnichart, is the reason the town has a twenty first century reputation as well as a twentieth century one, with a James Beard nomination and a Michelin Guide listing.

Go-to order or tip: Do not try all five. Two is a lot of meat. Kreuz or Smitty's for the old market experience, then Barbs for what Lockhart barbecue looks like now.

Hours
Something is open every day. Barbs B Q runs Friday to Sunday only

Seguin

Guadalupe County, 35 miles east of San Antonio on Interstate 10 · $$

Known for Burnt Bean Co., named the best barbecue joint in Texas by Texas Monthly in 2025

If you want the single best plate of barbecue in Texas on one trip, this is the drive. Burnt Bean Co. in downtown Seguin took the number one spot on Texas Monthly's 2025 Top 50, a list the magazine only publishes every four years and builds from more than three hundred visits. It also carries a 2024 Michelin Bib Gourmand, a 2025 Michelin Guide Texas listing, and James Beard semifinalist nods in 2024 and 2025.

Ernest Servantes and David Kirkland run it as a craft shop rather than a market, which means the sides and the specials matter as much as the brisket. The Sunday Tejano breakfast service from 8 a.m. is the thing people who have been twice go back for. Thursday to Sunday only, and it closes at 3 p.m. or sooner.

Go-to order or tip: Arrive before noon on a weekend. A joint ranked first in the state that closes at 3 p.m. runs out, and the queue forms before the doors do.

Burnt Bean runs Thursday to Sunday, closing at 3 p.m. or when it sells out

Taylor

Williamson County, 35 miles northeast of Austin · $$

Known for Louie Mueller Barbecue, open since 1949 and a James Beard America's Classic

Louie Mueller is the room that photographs better than any other barbecue joint in Texas, and the walls earned their colour honestly since 1949. The James Beard Foundation gave it an America's Classics award for the Southwest in 2006, presented to second generation pitmaster Bobby Mueller, and the foundation named dishes from here a Best Bite in both 2013 and 2015. Wayne Mueller, the third generation, runs the pits now.

The beef rib is the order, a single bone that arrives looking like a prop. Taylor is a smaller and quieter trip than Lockhart, which is part of the appeal: you are not choosing between five joints, you are going to one and giving it your full attention.

Go-to order or tip: Go early in the day and on a weekday if you can. This is a sell out joint, and the beef ribs go first rather than last.

Hours
Daytime hours, closing when the meat runs out. Check before a long drive

Lexington

Lee County, about 50 miles east of Austin on US 77 · $$

Known for Snow's BBQ, which fires its pits one morning a week

Snow's at 516 Main Street is the strangest great restaurant in Texas. It opens one day a week, Saturday, at 8 a.m., and it closes when the meat is gone, which can be well before noon. Texas Monthly named it the best barbecue joint in the state in 2008 and again in 2017, and it was still in the top ten in 2021.

The pitmaster is Tootsie Tomanetz, who has been lighting these fires in the small hours for decades and who became genuinely famous after the Netflix series Chef's Table BBQ in 2020. Kerry Bexley owns it. The honest warning is that the attention changed Lexington Saturdays, and the line now forms in the dark.

Go-to order or tip: This is a 5 a.m. departure from Austin, not a leisurely morning. If that sounds absurd, go to Lockhart instead and come to Lexington when you are ready to take it seriously.

Hours
Saturday only, from 8 a.m. until sold out

Elgin

Bastrop County, 25 miles east of Austin on US 290 · $$

Known for Being named the Sausage Capital of Texas, with two rival smokehouses to prove it

The Texas House named Elgin the Sausage Capital of Texas in a 1995 resolution, and the whole town runs on a single rivalry. Southside Market at 1212 Highway 290 traces itself to 1882, when William J. Moon began selling sausage from his slaughterhouse door, and it calls itself the oldest barbecue joint in Texas. Its hot guts are the reason "Elgin sausage" means something on a menu 200 miles away.

Meyer's Elgin Smokehouse at 188 US 290 is the other side of the argument, built on a Meyer family recipe carried over from Germany, with the sausage company older than the restaurant. Sources disagree on the exact founding years for each arm of the business, so take the nineteenth century lineage and skip the trivia. Eat a link at both and pick a side. That is the entire reason to come.

Go-to order or tip: Buy raw links to take home as well as a plate to eat there. Both places sell sausage by the pound, and it travels better than brisket does.

Hours
Both main smokehouses keep long daily hours, Meyer's until 8 p.m.

Llano

Llano County, 75 miles northwest of Austin in the Hill Country · $$

Known for Cooper's Old Time Pit Bar-B-Que, where you pick your meat off the pit yourself

Cooper's at 604 West Young Street has been in Llano since Tommy Cooper opened it in 1962, and it does something none of the Central Texas market joints do. The meat sits over direct mesquite coals in open pits out front, you walk up, point at what you want, and a pitman lifts it onto your tray. That is cowboy style cooking rather than the German butcher tradition, and it tastes different.

Order the big chop. It is a pork chop thick enough to be a mistake, and it is the thing Cooper's is actually famous for among people who have been more than once. Llano is far enough west that this is a day trip with scenery attached rather than a quick run out of Austin.

Go-to order or tip: Have your plan ready when you reach the pit. The line moves at the speed of the slowest decision, and you will be making yours in front of an audience.

Hours
Daily from 11 a.m., closing 8 p.m. most nights and 9 p.m. Friday and Saturday

Luling

Caldwell County, on US 183 between Lockhart and Interstate 10 · $

Known for City Market, one of the last true meat market barbecue rooms in Texas

City Market at 633 East Davis Street opened in 1958 and almost nothing about it has changed, including Joe Capello, who has been the manager and pitmaster for decades. You order inside a small smoke filled room at the back, the meat comes on butcher paper, and the sides are an afterthought by design. The Houston Chronicle has called it a window into Texas barbecue history, which is accurate rather than flattering.

Luling itself is a 20 minute drive from Lockhart, which makes the two of them the best barbecue day in Texas if you are willing to split one plate at each. The town's other claim to fame is the Watermelon Thump in June.

Go-to order or tip: Closed Sunday, closes at 6 p.m. the rest of the week, and it is cash friendly and queue free compared with Lockhart. Hit it on the way back.

Driftwood

Hays County, about 25 miles southwest of Austin off FM 1826 · $$

Known for The Salt Lick, the big open pit people bring out of town visitors to

The Salt Lick at 18300 FM 1826 has smoked over the same open pit since 1967, and the pit sits right inside the door so that it is the first thing you see. The Roberts family traces the recipes back generations, and the setting, long tables under oaks on a Hill Country property with its own winery next door, is a large part of why this place is on every Austin visitor itinerary.

Be clear about what it is and is not. Purists will tell you the brisket is not the best in Texas and they are right. It is however the best large group barbecue in the state, it is open late, and the family style all you can eat plate makes feeding eight people simple. The original Driftwood location is BYOB, which no other joint on this list can say.

Go-to order or tip: Bring your own beer or wine, or buy local at Salt Lick Cellars in the same parking lot. Payment policy has loosened from the old cash only rule, but bring cash anyway if the group is large.

Hours
11 a.m. to 9 p.m. Sunday to Thursday, until 10 p.m. Friday and Saturday

Wolfforth

Lubbock County, 10 miles southwest of Lubbock · $$

Known for Evie Mae's Pit Barbeque, the best barbecue on the South Plains by a wide margin

Evie Mae's at 217 US Highway 62 is the reason West Texas is on this list at all. It placed tenth on Texas Monthly's 2025 Top 50, the highest finish of any joint west of the Interstate 35 corridor, and it did that from a town of a few thousand people outside Lubbock.

The gluten free pies and the green chile sides are not a gimmick, they are a genuine house style, and the brisket holds up next to anything in Central Texas. If you live in the Panhandle or the South Plains, this is your answer and you do not need to drive nine hours to Lockhart to get one.

Go-to order or tip: Tuesday through Sunday and it sells out, so treat it like a Central Texas joint rather than a restaurant. Lunchtime, not dinner.

How did we pick these?

We ranked towns, not restaurants, which is a different exercise. A town earns a place here if the barbecue is the reason to make the drive, and it ranks higher when there is more than one pit worth pulling over for.

That is why Lockhart is first by a distance. Five working joints inside one small town is unique in Texas, and the 1999 House resolution is a real legislative act rather than marketing. It is also why Seguin sits second ahead of towns with longer histories. Burnt Bean Co. took the top spot on Texas Monthly's 2025 Top 50, a list published once every four years off the back of more than three hundred visits, and the best single plate in Texas is worth a tank of fuel.

Every joint named here was checked against its own website for address, days and current trading, then cross checked against an independent source: the Houston Chronicle for Luling's City Market, the James Beard Foundation's own award record for Louie Mueller, local news coverage for Evie Mae's, and the chamber directories for the towns themselves. Where sources disagreed, and they did on Meyer's founding dates in Elgin and on the Salt Lick's payment policy, we described the pattern instead of picking a number. No business on this page is a client of ours and nothing here is sponsored.

What should you know before you go?

Texas barbecue towns run on two rules that catch out first timers. The good joints sell out, often by early afternoon, and several of them are closed on the days you would most expect a restaurant to be open.

Town The anchor joint Open days Why go
Lockhart Kreuz, Smitty's, Black's, Chisholm Trail, Barbs Something daily, Barbs Friday to Sunday Five joints, one town
Seguin Burnt Bean Co. Thursday to Sunday, closes 3 p.m. Best single plate in Texas
Taylor Louie Mueller Daytime, sells out A 1949 James Beard classic
Lexington Snow's Saturday only, from 8 a.m. Twice named best in the state
Elgin Southside Market and Meyer's Daily, long hours Sausage, and a real rivalry
Llano Cooper's Daily from 11 a.m. Open pit cowboy style
Luling City Market Monday to Saturday, closes 6 p.m. An unchanged 1958 meat market
Driftwood The Salt Lick Daily until 9 or 10 p.m. Big groups, BYOB, late
Wolfforth Evie Mae's Tuesday to Sunday, sells out Best in West Texas

Two more practical notes. Brisket goes before ribs at some joints and after at others, so if there is one cut you came for, say so when you order rather than deciding at the counter. And the classic market joints serve on butcher paper with white bread, pickles and onion, which is not a shortcut, it is the tradition.

Which barbecue towns did we leave out, and why?

Austin, Houston, Fort Worth and Dallas all have joints that would beat most of this list. LeRoy and Lewis and Franklin in Austin, Goldee's in Fort Worth, Truth in Houston. They are cities, not towns, and a reader searching for a barbecue town is asking which drive to make rather than which city to move to. If you want the metro version, start with our guide to the best barbecue in Dallas.

We also left out towns carried by a single good but unranked joint, because the whole point of driving an hour is that the food is better than what is near you, not merely different.

What should you do next?

Pick by the calendar, because the calendar does the deciding here. If it is a Saturday and you can leave before dawn, go to Lexington. If it is Thursday to Sunday and you want the best plate in Texas, go to Seguin. Any other day, drive to Lockhart, eat at two joints, and run down to Luling for a third on the way home.

From here you can browse everything we have published on barbecue across Texas or the rest of our Texas coverage. If you are making a weekend of it, the best dance halls in Texas pairs with several of these towns, and the best small towns in Texas to visit covers what there is to do once you have eaten.

Frequently Asked Questions

The Texas House of Representatives adopted House Resolution 1024 on May 26, 1999, formally naming Lockhart the Barbecue Capital of Texas, and the Senate adopted it in 2003. The claim rests on having four historic joints plus a modern one inside a town of roughly 14,000 people, which no other Texas town matches.

Seguin, on the strength of Burnt Bean Co. taking the top spot on Texas Monthly's 2025 Top 50. That list is only published every four years and is built from more than three hundred visits across the state, which makes it the most considered ranking available.

Lockhart and Luling work well together, 20 minutes apart on US 183, if you split a plate at each rather than eating two full ones. Lockhart and Driftwood are also doable. Lexington plus anything is hard, because Snow's closes by late morning on its one open day.

Almost none of them do. Texas barbecue runs on queues and sell outs instead. The Salt Lick in Driftwood is the main exception for large groups, and Burnt Bean in Seguin publishes limits on what it will hold. Everywhere else, arrive early and expect to wait.

Central Texas style comes out of German and Czech butcher shops, smoking salt and pepper rubbed meat indirectly over post oak, served on butcher paper with minimal sauce. Cowboy style, which Cooper's in Llano does, cooks over direct mesquite coals in open pits. The second is hotter, faster and tastes noticeably smokier.

If you already live out there, yes. Evie Mae's in Wolfforth finished tenth statewide in 2025, the best result for anywhere west of Interstate 35. If you are starting from Dallas or Houston, the Central Texas towns are closer and deeper.
